

To make the green onion salsa, place the green onions, coriander, basil, parsley, vinegar, oil, salt and pepper in a bowl and mix well to combine. Set aside.
Heat a large, deep frying pan over high heat. Add the butter, onion and garlic and cook for 2-3 minutes or until the onion is tender. Add the rice and stir for 1 minute or until the butter has coated the rice. Pour in the stock and bring to the boil. Reduce the heat to low and place the chicken on top of the rice. Cover with a tight fitting lid and cook for 20 minutes or until the chicken is cooked. Top with the green onion salsa to serve. Serves 4.
