Partridges Stuffed with Chestnuts

Ingredients

  • 50g butter
    2 shallots, chopped
    4 partridges (livers reserved if possible, otherwise user other game bird livers or chicken livers)
    450g peeled chestnuts
    150ml full-fat milk
    8 rashers streaky bacon
    A little vegetable or chicken stock
    Fresh thyme sprigs, to garnish
