

Preheat the ovento 180C / Fan 160C / Gas 4. Put the onions into a heavy-based flameproof casserole. Cut each grouse in half and add to the pot. Put in the bacon and thyme, and season. Pour in the beer, bring to the boil on the hob, cover, then put into the oven for 50 minutes.
Mix together the marmalade, sherry and butter. Add to the casserole with the turnips. Return the casserole to the oven for a further 50 minutes. If it is drying out, add more beer. Garnish with thyme and serve with seasonal vegetables.
