Recipe

Put a piece of seasoned butter in each bird and cover the breasts with fatty bacon or barding fat. Saute the liver of the bird in butter, mash it, and spread the mixture onto a piece of white toast. Roast at 375F for 30-40 minutes, depending on how rare you like it. Serve with bread sauce, gravy, game fries, and watercress salad. Allow 1 bird per person.
